Baked Oyster Sauce Chicken

    This is an amazingly quick recipe to make. Chicken thighs are baked alongside a garlic and oyster sauce mix. It's slighty sweet and sticky and delicious served with rice.

    Serves: 4 

    • 8 chicken thighs
    • salt and pepper to taste
    • 285ml oyster sauce
    • 2 teaspoons finely chopped garlic
    • 150g caster sugar
    • 4 tablespoons water

    1. Preheat oven to 200 C / Gas 6.
    2. Place chicken thighs in a lightly greased 23x33cm or similar sized baking dish. Season with salt and pepper to taste and bake in the preheated oven for about 25 minutes.
    3. Meanwhile, in a medium bowl combine the oyster sauce, garlic, sugar and water. Mix together and taste the sauce; if it is not sweet enough, add sugar to taste.
    4. After chicken has baked for 25 minutes, pour sauce over it and bake for another 20 minutes or until chicken is cooked through and juices run clear.

    Used different ingredients. I changed the icing sugar to brown demerera sugar, I added 1 tbsp shaoshing rice wine (which is like chinese sherry), 1 tbsp of Japanese black rice wine vinegar and 1 tbsp of dark soy sauce. I then heated this on the hob before adding it to the oven so that there weren't big sugar granules. The whole thing turned out absolutely gorgeous, and the sauce is amazing Thanks for the original idea, I loved it  -  18 Aug 2010

    I just made this for lunch now and it is delicious! My whole family couldn't get enough! I kinda did what fluffybunny81 did, but used 1tbsp of each: white cooking wine, Mizkan rice vinegar, and reduced salt soy sauce. Mixed these with the sugar first before I added the oyster sauce and chopped garlic! This will be a regular for meals, definitely! Thanks so much! x  -  25 Apr 2015
