About this recipe:This barbecue sauce goes beyond the usual concoction, deriving flavour from orange juice, red wine and lots of garlic. It's perfect on any cut of chicken.
3 tablespoons vegetable oil
2 onions, chopped
5 cloves garlic, minced
320ml (11 fl oz) high quality orange juice
1 dessertspoon mustard powder
450g (16 oz) ketchup
1 lemon, juiced
7 tablespoons red wine
salt and freshly ground black pepper to taste

In a medium frying pan, sauté onion and garlic for 4 to 5 minutes, or until translucent. Add the orange juice, mustard, ketchup, lemon juice, red wine, salt and pepper. Simmer all together over low heat for 30 minutes, then blend in a blender or food processor. Sauce may be thinned with water to taste, if desired.
