Citrus barbecue sauce for chicken

About this recipe: This barbecue sauce goes beyond the usual concoction, deriving flavour from orange juice, red wine and lots of garlic. It's perfect on any cut of chicken.


Serves: 24 

  • 3 tablespoons vegetable oil
  • 2 onions, chopped
  • 5 cloves garlic, minced
  • 320ml (11 fl oz) high quality orange juice
  • 1 dessertspoon mustard powder
  • 450g (16 oz) ketchup
  • 1 lemon, juiced
  • 7 tablespoons red wine
  • salt and freshly ground black pepper to taste

  1. In a medium frying pan, sauté onion and garlic for 4 to 5 minutes, or until translucent. Add the orange juice, mustard, ketchup, lemon juice, red wine, salt and pepper. Simmer all together over low heat for 30 minutes, then blend in a blender or food processor. Sauce may be thinned with water to taste, if desired.
