Best sausage and sun-dried tomato quiche

    The delicious combination of sausage and sun-dried tomatoes go together in this quiche recipe. Feel free to experiment with any sausagemeat you fancy. It's great for lunch or dinner.

    Serves: 8 

    • 1 (20cm) uncooked pastry case
    • 225g sausagemeat
    • 2 shallots, chopped
    • 1 clove clove garlic, finely chopped
    • 25g chopped sun-dried tomatoes
    • 2 tablespoons chopped fresh parsley
    • 4 eggs
    • 250ml whipping cream
    • 115g Mozzarella cheese, grated

    1. Preheat an oven to 220 C / Gas 7. Place a double layer of foil over the base of the pastry case. Bake in the preheated oven for 8 minutes, then remove foil. Continue baking until crust begins to set, about 5 minutes; remove from oven. Reduce oven temperature to 180 C / Gas 4.
    2. In a large frying pan, cook sausagemeat until well browned, stirring frequently. Mix in shallots and garlic and continue cooking for 1 minute. Stir in sun-dried tomatoes and 1 tablespoon parsley. Spread mixture into the bottom of the warm pastry case.
    3. In a mixing bowl, beat eggs with cream. Stir in cheese. Pour mixture over sausage in pastry case. Sprinkle remaining parsley over the top.
    4. Bake in preheated oven until pastry browns and a knife inserted in the centre comes out clean, about 45 to 60 minutes.

    You may get some leftover filling if using a 20cm pastry case. If you can find a 23cm pastry case, use that instead.

    This is excellent. I love it! Bf liked it very much too. I used bacon as I didn't have sausage, but I'm sure it would be just as good with sausage. To make things easier on myself, I just chopped the sun dried tomatoes in the food processor with the rest of the ingredients that needed mixed with it. Takes a few pulses and voila! mixed together and chopped sun dried tomatoes all at the same time. I used the jarred sun dried tomatoes in oil for this recipe as it didn't say one way or the other. Worked perfectly. At the written time and temp it got pretty dark; I probably should've checked on it, but it really didn't affect the taste at all. Still very wonderful. Thanks for the recipe!     DH loved it. I used the Basic Flaky Pie Crust recipe for the crust. Substituted chopped onion for the shallots. Used dried tomato in a package-no oil-and snipped it very fine with kitchen scissors. Used a mix of colby and mozzerella grated cheese because that's what I had. Baked at 350F for 50 minutes in a French White quiche dish, let it set for 10 minutes. Used mild sausage; it was very good.  -  05 Apr 2011  (Review from Allrecipes US | Canada)
