Simple Chicken Liver Pate

    2 hours 35 min

This dish is known as chopped liver. It's essentially chicken liver pate, but doesn't use any butter or cream. Eggs are used instead. It's tasty on crackers, bread or in sandwiches.

    Serves: 8

    • 2 eggs
    • 2 tablespoons rapeseed oil
    • salt to taste
    • 450g chicken livers, rinsed and trimmed
    • 2 onions, chopped
    • 1 pinch caster sugar

    Prep:15min  ›  Cook:20min  ›  Extra time:2hr chilling  ›  Ready in:2hr35min

    1. Place the eggs into a saucepan in a single layer and fill with water to cover the eggs by 2.5cm. Cover the saucepan and bring the water to the boil over high heat. Once the water is boiling, remove from the heat and let the eggs stand in the hot water for 15 minutes. Pour out the hot water, then cool the eggs under cold running water in the sink. Peel and chop once cold.
    2. Meanwhile, heat the rapeseed oil in a frying pan over medium heat. Stir in the onion; cook and stir until the onion has softened and turned translucent, about 5 minutes. Reduce heat to medium-low and continue cooking and stirring until the onion is very tender and golden brown, 5 to 10 minutes more. Place onion on a plate and set aside. Stir chicken livers into the same frying pan. Cook until no longer pink in the centre and the juices run clear. Place chicken livers on the same plate as the onions and allow to cool completely.
    3. Place chicken livers and onion in a food processor. Process until desired texture is achieved. Place liver mixture into a bowl and season with salt and sugar. Stir in the chopped eggs. Chill before serving.

OMG - this is SO GOOD! At first I wasn't sure - it was my first time making this and it seemed too easy to be true, but it really is fantastic! I threw the eggs into the processor with everything else and it turned out great! Thank you for sharing such a great and easy recipe!  -  23 Oct 2011  (Review from Allrecipes US | Canada)

This was really basic and good. easy to make and I added some garlic powder and Mrs. Dash lemon pepper seasoning and used olive oil instead of canola. YUM!  -  05 Sep 2014  (Review from Allrecipes US | Canada)
