Sweet and Sour Sesame Dressing

    A sweet and sour salad dressing that is delicious and really fragrant. It's perfect for most salads. Try it on mandarin chicken salad. If you want more sesame flavour, add about 1-2 teaspoons of sesame oil.

    Serves: 24 

    • 1 small onion, chopped
    • 300g caster sugar
    • 2 teaspoons dry mustard powder
    • 1 teaspoon sea salt
    • 2 teaspoons soy sauce
    • 150ml rice vinegar
    • 475ml rapeseed oil
    • 4 tablespoons toasted sesame seeds

    1. Process the onion in a liquidiser or food processor until smooth. Pass through a mesh sieve. Reserve 3 tablespoons of onion juice; discard the remaining pulp.
    2. Combine the sugar, mustard powder and salt in the bowl of an electric mixer. Use the paddle attachment to mix the sugar until the spices are evenly blended. Pour in the reserved onion juice, soy sauce and rice vinegar. Mix for several minutes until the sugar has begun to dissolve. Slowly drizzle in the rapeseed oil with the mixer running at a medium-high speed. Add the toasted sesame seeds and continue mixing 1 minute more.

    I followed this exactally, except for the onion, and it was AMAZING! This was perfect with the meal i made. It was very tangy but has a sweet after taste.     I'm giving this 5 stars because I made it with sesame oil instead of canola. I used a fraction of the sugar and only had dried onion flakes so used 1/2 of what recipe called for with fresh.
