White chocolate macadamia cookies

About this recipe: Deliciously rich, soft and chewy cookies made with white chocolate and macadamia nuts. You can add white chocolate chips if you prefer. Serve these indulgent treats with tea, coffee or on their own.


Makes: 12 cookies

  • 150g unsalted butter
  • 100g caster sugar
  • 110g dark brown soft sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 200g plain flour
  • 100g macadamia nuts, chopped
  • 175g white chocolate, chopped

  1. Preheat oven to 170 C / Gas 3. Lightly grease baking trays.
  2. Beat butter, sugars, egg and vanilla at medium speed of electric mixer until fluffy.
  3. At low speed, gradually beat in flour, just until blended. By hand, stir in nuts and chocolate.
  4. Drop by heaping tablespoonfuls, 6cm apart, onto the prepared baking trays.
  5. Bake for 17 minutes or until edges of cookies are lightly browned and tops look dry. Allow to cool on baking trays five minutes, then remove to racks to cool completely.
