    About this recipe: A mixture of grated courgettes, onions, carrots, celeriac and flour are mixed togehter with aniseed and celery seeds, before being fried to perfection. Ideal for appetisers or general snacking.

    Serves: 2 

    • 1 courgette, grated
    • 1 onion, grated
    • 1/2 carrot, grated
    • 1 clove garlic, finely chopped
    • 1/2 celeriac (celery root), peeled and grated
    • 3/4 tablespoon aniseed, crushed
    • 1/2 tablespoon celery seed
    • 1 teaspoon salt
    • 1 pinch ground black pepper
    • 60g plain flour or as needed
    • 1 litre oil for frying

    1. Mix courgette, onion, carrot, garlic, celeriac, aniseed, celery seed, salt and pepper together in a bowl. Gradually stir in flour until you have a soft, wet dough that sticks to your hands.
    2. Heat oil in deep-fryer to 190 degrees C. Drop batter by tablespoons into the frying pan and fry on both sides until lightly browned.
