1 courgette, grated
1 onion, grated
1/2 carrot, grated
1 clove garlic, finely chopped
1/2 celeriac (celery root), peeled and grated
3/4 tablespoon aniseed, crushed
1/2 tablespoon celery seed
1 teaspoon salt
1 pinch ground black pepper
60g plain flour or as needed
1 litre oil for frying

Mix courgette, onion, carrot, garlic, celeriac, aniseed, celery seed, salt and pepper together in a bowl. Gradually stir in flour until you have a soft, wet dough that sticks to your hands.
Heat oil in deep-fryer to 190 degrees C. Drop batter by tablespoons into the frying pan and fry on both sides until lightly browned.
