    This is my mum's old faithful recipe. Even though I used her recipe somehow they never turned out the same as my mum's.

    Makes: 9 scones

    • 250g self-raising flour
    • 1 teaspoon bicarbonate of soda
    • 1 teaspoon cream of tartar
    • pinch of salt
    • a little margarine
    • a little syrup
    • 1 egg mixed with a little milk
    • water for consistency

    1. Preheat oven to 240 C / Gas 9.
    2. Sieve all dry ingredients into a bowl. Rub in margarine and syrup, add egg mix well. Add water to make a dough. The dough should not be wet and sticky, but should form a ball. Roll out onto a dusted floured surface to 1cm (1/2 in) thick and cut into pieces.
    3. Place on a baking tray, bake for 10-15 minutes.


    A little is about 1/2 level teaspoon.
