Banana and apricot flapjacks

    A really moist and surprisingly healthy snack. These flapjacks are loaded with seeds, almonds, dried apricots, dates and bananas.

    Makes: 12 flapjacks

    • 100g butter (or butter substitute)
    • 2 tablespoons golden syrup
    • 1 tablespoon agave or date syrup
    • 50g seeds (pumpkin, sunflower)
    • 35g almonds, roughly chopped
    • 150g rolled oats
    • 100g dried apricots, roughly chopped
    • 30g dried dates, roughly chopped
    • 2 bananas, mashed (approximately 250g)

    1. Line and grease a 20cm square baking tin (set aside). Preheat the oven to 170 C / Gas 3.
    2. Melt the butter and syrups in a saucepan over a low heat.
    3. Put all the dry ingredients into a bowl and mix in the mashed bananas. Add the melted mixture and turn out into prepared tray. Flatten to roughly 1.75cm (2/3 in) in depth. Do not worry if it does not spread across the tray. The mixture will bake in whatever shape you create!
    4. Bake for 20 to 30 minutes. Allow to cool in the tray - but it is easier to divide the mixture after 10 minutes of cooling or so. Turn out onto wire rack to cool completely.


    Use any seeds or nuts that you have. I use 3:2 porridge to rye oats. Proportions and ingredients are only general guidelines.

    fantastic recipe! Doesn't take 21/2 hours- about 10 min prep, 30 mins cook. Delicious soft flapjacks, tasty and healthy, absolutely fabulous for luchbox snacks and on the go.  -  21 Sep 2011


    this recipe worked fine but i must admit none of the family were particularly fond of these, but thats just our opinion  -  07 Sep 2012
