Honey and soy salmon with rice and veg

    A really tasty and healthy dinner inspired by japan! this is my first recipe so please forgive me if its a bit vague as I dont really use specific amounts of anything! I've had a guess at the amounts I use anyway, enjoy!

    Serves: 2 

    • 2 portions fresh salmon
    • 500g brown rice
    • 2 portions mixed vegetables
    • 2 tbs honey
    • 2 tbs light soy sauce

    Prep:10min  ›  Cook:25min  ›  Ready in:35min 

    1. 1. Preheat oven to 180oc. Place portions of salmon onto seperate sheets of tin foil and fold edges up to form a little "boat" around each piece.
    2. 2. Score each piece of salmon widthways about 1cm into the flesh and pour the soy sauce and honey equally onto each piece.
    3. 3. Place in the oven on a baking tray for 25mins. Meanwhile cook the rice as the instructions on the packet ( I use microwave rice as its easier)
    4. 4. Use a microwaveable bowl with a lid ( one with a whole in) to steam the vegetables. Add a little water to the bowl and steam the veg for about 4 mins, shaking half way.
    5. 5. Once the salmon is cooked serve with the rice and veg. Useing a little more soy sauce to season the veg and rice.

    With the salmon 'boats' is that so it isn't covering the top of the salmon?  -  28 May 2016
