Easy beef stroganoff

    Serves: 4 

    • 450g sirloin steak, trimmed and cut into 1cm strips
    • 1 tablespoon olive oil
    • 1 tablespoon butter
    • 1 large onion, thinly sliced
    • 250g mushrooms, sliced
    • 250ml soured cream
    • 1 tablespoon grainy mustard
    • 1 tablespoon chopped flat leaf parsley

    1. Heat oil and butter in a frying pan over medium high heat. Brown the steak strips on all sides, then remove from pan and set aside. Cover the steak with foil to keep warm.
    2. Add onion to frying pan and saute until soft and translucent. Add mushrooms and cook until all juices have evaporated.
    3. Return the steak to the pan. Stir in the soured cream and mustard and heat through.
    4. Sprinkle with chopped parsley and serve.

    To serve

    Serve this stroganoff with white rice, egg pasta or a wild rice blend, with some green veg on the side.

    I served it up with mustard mash, ended up with 2 happy teenagers and 4 empty plates, definitely going to be making it again soon :-)  -  21 Nov 2015
