Pre-heat the oven to 180 C / Gas mark 4. Mix all the ingredients for the cakes in a bowl or food processor and beat together until smooth.

Divide the mixtures into 5 separate bowls and add the food colouring to each mixture

Then spoon each colour into the cases. I started off with blue, then green, yellow, orange and finally red. Don't press it down, just spoon each colour on top of each other and it should naturally flatten.
Yummy and very pretty.
I did make a topping (see tweaks) after the coconut i added edible flower decorations on some and tiny cute edible bees made from icing on the rest.
These cakes were alot of fun to make, something i think children would enjoy.
They turned out brilliantly and i will definitely be making them again.

I did make a topping as follows:
30g butter, softened
80g cream cheese, softened
2 tsp coconut milk or cream
240g icing sugar,
dessicated coconut for sprinkling
Decoration of choice (optional)
After adding to cake, sprinkle with dessicated coconut , and topped with a edible flower decoration.
