This delicious stew is inspired by my friend from Sierra Leone who often cooks for her family. Many ingredients can be modified. This is kind of a 'whatever is on hand' recipe. You can use a whole chicken cut into bite-sized pieces, or just breasts and thighs if you prefer. Other suggested additions are turnips, carrots and celery. This looks great served over white rice with a garnish of fresh chopped coriander, parsley or unsalted peanuts.

This is a cold, garlicky Spanish soup - perfect in summer, especially if you can't make it to Spain. Fresh almonds, just out of their shells, are traditionally used. This version calls for ground almonds, as fresh almonds are hard to come by here.

This is a popular Catalan garlic sauce that goes very well with grilled meat and roasted pepper and aubergine (Escalivada). I have seen many spellings for this (i.e. alioli, aioli...) but the real name is "All i Oli" - from the Catalan for Garlic and Oil - and these 2 are the only ingredients although there are variations and some places add egg to ensure the consistency of the sauce, which with our without egg should look like mayonnaise.

This cake is moist and creamy. At the same time, you can taste and smell of almond and apple too. Suitable for tea time & parties.

This cake came about from an inspired moment when craving almonds. It's absolutely divine and has become an often requested recipe. One warning however, whenever I cook this cake it seems to disappear very quickly so make sure you get a slice. I've said the recipe serves 8 but it serves 6-8 depending on how much cake one likes at any sitting!

This dish melts in your mouth. The credit goes to my future mother-in-law. Not only does it taste gorgeous, but halibut is a sustainably sourced fish. Each halibut fillet should be approximately an inch thick. Substitute crème fraîche for the double cream for a lighter dish.

I saw a recipe for this ages ago and always planned on making it myself. I couldn't find the original recipe so had to improvise. I was really pleased with the results, and so were the rest of the family. Amarula is a cream liqueur from Southern Africa and it's easily available. I guess you could try this with Baileys or any other cream liqueur you can get your hands on

With its two key ingredients - rum and butter - this Christmas cake recipe ought to be a hit. This is less dense and more cake-like than many Christmas cake recipes. It has become a favourite of my friends and family at Christmas, and is delicious by itself, or covered with a layer of marzipan and icing.
