This is a recipe that was handed down to me from my great aunt. My husband asks me to make this for all special occasions.

This is my favourite Caribbean dish which is very well seasoned (a trademark of Caribbean food) and have always enjoyed it as a child. The sauce should not be as thick as a curry and not too watery if that makes any sense. There are many varieties of this dish and is always best served with rice and peas and West Indian pepper sauce.

This delightful icing is perfect on banana cake or muffins, or even a peanut butter cake.

The melding of banana, coconut and pecans give this cake a unique flavour, and the luscious Banana Nut Icing is truly the icing on the cake. Best if made a day before serving.

Just like the title says - a delicious pavlova topped with banana slices, caramel sauce and whipped cream. The perfect combination of two very yummy desserts making one that will have you making it over and over again.

This banana and toffee tart is well worth the wait and requires little actual prep time. I like to use hob nobs but digestives or shortbread work well too.

A brilliant Black Forest cake which is soaked in Kirsch liqueur, with cherry filling.

I adored black forest gateaux in the 70s and loved trifle so decided I would fuse the two. You can make it all from scratch but also easy to substitute ready made goods if you don't have the inclination. The ingredients are split to enable you to decide at each 'layer'.

Brandy makes a welcome appearance in this basic cream cheese frosting. Perfect for a variety of cakes, especially carrot, apple or banana.

This is an alternative to the classic cream cheese frosting recipe, using brown sugar and honey instead of icing sugar. My Husband and I use it on Banana or Carrot Cake.

This is like the icing that bakeries put on birthday cakes, but I much prefer to make my own since I know what I am putting into it, and as always, homemade is best.

An easy to make egg-free icing that works great for decorating cakes for birthdays. When you need to add colouring to icing, use colour paste. If you use liquid colouring, you may need to add more icing sugar.
