These spicy, zesty chicken skewers are inspired by the hot, tropical nights in Barbados.
This is my favourite Caribbean dish which is very well seasoned (a trademark of Caribbean food) and have always enjoyed it as a child. The sauce should not be as thick as a curry and not too watery if that makes any sense. There are many varieties of this dish and is always best served with rice and peas and West Indian pepper sauce.
I just love patties and here's a traditional recipe that beats the commercial stuff you buy from most West Indian takeaways or the stuff you buy in packets that gives you next to no amount of meat. This recipe depends on the amount of heat that you like. I personally would add 5 Scotch bonnet peppers to my mixture but typically you should add 1 to 2 Scotch bonnet peppers.
This is a Jamaican ginger cake. It attracted rave reviews at my latest tea party.
These are delicious curried beef pies that are found in Jamaica and other islands in the Caribbean. They freeze well, and make perfect picnic food or packed lunches. Enjoy!
