Four bean and sweetcorn salad
Recipe by:
Vickie de Vries
This salad is best served with cold meats or fish. To make it different every time, change your herbs and spices. It tastes really good the second day too, as the lemon juice has time to soak into the beans.
Creamy Bacon and Potato Salad

A rich and creamy potato salad with bacon to add a smoky flavour to the dish. A nice addition to any buffet table to accompany a summer BBQ.
Rocket Salad with Pears, Pine Nuts, Pancetta and Dolcelatte
Recipe by:
CPENABAUER
I love making salads and salad dressings and this combination of rocket, pear, pine nuts, pancetta and balsamic vinegar seems to impress people the most. It's so easy and delicious that this is my 'go to' salad recipe when I have unexpected guests, as it looks really 'fancy' too. The inspiration for this comes from a nice restaurant in Hamburg - where they served a salad with a crisp slice of prosciutto di Parma on top, but I make it with pancetta or even bacon, as it's easier to eat with a fork!
Apple, Beetroot and Avocado Salad

A lovely apple vinaigrette makes the fresh beetroot, avocado and apples in this gorgeous salad come alive. This is a fun salad to serve guests arranged and layered on serving plates.
Avocado Green Goddess Dressing
Recipe by:
LISALISALISA
Green goddess dressing was popular in the 70s - with it's gorgeous mix of flavours, why not start a revival? This is perfect over crisp and mild lettuce leaves, like romaine or little gem.

Cucumber And Yoghurt Salad

This tastes best served very cold as it's most refreshing that way. Works with fresh or dried mint (or dill, if you prefer). Nice side dish for bbq Greek kebabs.
Cucumber and Feta Salad
Recipe by:
MIKEGINNY
A bit like a Greek salad - this chunky salad doesn't need any lettuce or oil. It's full of flavour from olives, red onion and feta cheese. It's very easy to make and perfect for barbecue parties and picnics.
Party Pasta Salad

This pasta salad reminds me of summer and it feeds a crowd! I regularly use up leftovers (chicken and veggies) in this salad.
Simple Summer Salad

This salad couldn't be simpler, but is a delicious accompaniment to barbecued meats, kebabs or fish.
Waldorf Salad
Recipe by:

My recipe is a little bit different from the classic. For the dressing, I use apple juice and yoghurt mixed in with the mayonnaise.
Swordfish with salsa dressing
Recipe by:
Azmina Govindji
Orange juice adds a refreshing note to the salsa-style tomato and pepper dressing for this vibrant-looking salad. As the dressing can be made well in advance and the swordfish steaks take only minutes to cook, this is a very quick dish to prepare, ideal when you are entertaining. Serve with lots of sesame breadsticks or crusty wholegrain bread.
Date and apple salad
Recipe by:
Norma MacMillan
A crunchy salad of fruit, vegetables and nuts in a creamy yogurt-based dressing, this is attractively presented on chicory leaves, the bitterness of the chicory providing a good contrast to the sweet fruit. Enjoy it for lunch with crusty bread, or serve it as a side dish to a main meal for 6–8, to accompany smoked chicken or other poultry.
Fruity pasta salad
Recipe by:
Norma MacMillan
Pineapple and pear give this salad a sweet accent, while a sprinkling of balsamic vinegar on the mixed salad leaves adds a delightful piquancy. With lean ham, a well-flavoured cheese, fruit and vegetables all adding their own nutrients to balance the pasta, the result is a marvellous dish for lunch or supper.
Tossed leaf and herb salad
Recipe by:
Norma MacMillan
A leafy salad with plenty of fresh herbs makes an excellent accompaniment to a whole range of dishes, from a simple roast chicken with potatoes, to pizza and pasta. For a crisp texture, make the salad just before you want to serve it and then toss with the dressing at the very last moment.
