Traditional Australian recipe, handed down from my mother. Her recipe has coconut and ginger in it which makes these especially good. Originally, these delicious bikkies were lovingly baked and sent in care packages to our soldiers at war.

A very dark, rich chocolate cookie for the true chocoholic. This recipe uses relatively little flour, resulting in dense, fudge-like cookies. These cookies keep well in the freezer (but you may have a hard time waiting for them to thaw before you eat them).

I hail from the Bicol province in the Philippines where people love to eat everything with coconut milk or chilli. I haven't experimented putting chilli into cookies yet but I've done a lot with coconut. Here's my coconut oatmeal cookies.

Both adults and children love these. Rice Krispies added to melted mars bars to make chocolaty, crispy and delicious treats. I can't eat wheat so this is great instead of biscuits or cake.

For all the gorgeous chocolate cakes around (and there are many), I still have a soft spot for these crunchy, chewy little buns. I include them partly because when looking for a recipe for them recently I found it suprisingly difficult to find one. Oh come on, don't tell me you don't like them! so get COOKING!!!

These easy peasy Florentines make a great gift, particularly at Xmas or on any other occasion. Makes 25 which will keep for 4-5 days in airtight container - indulge and enjoy!
