Berries are the utterly fresh flavour of summer. Tart, sweet and juicy, they come in a wide array of types, ranging from bright and delicate raspberries to fleshy strawberries, plump little blueberries and rich blackberries. The passion fruit is not a distinctive flavour in this dish, but instead it adds a fragrant tart edge.

Forget about smothering toasted crumpets in butter; this low-fat topping is really yummy and much healthier. Lightly mashed bananas are mixed with creamy fromage frais and warm spices and piled onto crumpets, then finished by drizzling with honey and grilled until bubbling. It's the perfect quick sweet snack.

I've been Diagnosed as allergic to Dairy and Muffins on a sunday morning for breakfast was just too good to give up!! You can Replace the rasberries with other fruits - Blueberries, Strawberries, Apple, Rubarb, Dried Fruits, Banannas even Chocolate Chips.

These fluffy American style pancakes make a special breakfast on cool autumn mornings. My boys loved to help me cook a batch for a 'breakfast for supper' night around Halloween. Use any and all decorations you like to make jack-o-lantern faces on the pancakes. Try broken chocolate bar pieces, banana slices, raisins, dried cranberries or chopped nuts.

This a is traditional Jewish classic dessert especially at your Purim celebration. It is customary to have food containing poppy seeds, fruits and nuts as this is what Esther ate whilst she was kept prisoner in the palace – they were some of the few ingredients that she could obtain that were kosher! As chocoholic I am always trying to make up for all of my weekend indulgences by finding ways to satisfy my sweet tooth during the week without any of of the naughtiness. This is as innocent as chocolate cheesecake comes, but its still rich, creamy and hits the spot when you just need some chocolate.

You can use any flavour of jam to make this recipe. . . raspberry, strawberry, blackcurrant or even lemon curd. These are so easy to make when you use a bread machine. If you don't have a bread machine - see footnotes for directions. Serve them plain, sugar coated or iced.

You can make the batter the night before to save time. I sprinkle blueberries or nuts on top just before closing the waffle iron. These make a nice weekend breakfast or birthday surprise!

This is a classic fried pastry, with versions popular in Chile, Argentina and the US. This recipe is similar to the ones you find in New Mexico. Roll in a mixture of cinnamon and caster sugar immediately after frying, or try drizzling with honey.
