This is a crunchy, wonderfully satisfying salad that is fab with grilled chicken leftover from yesterday's barbecue. The dressing is sweet and sour, mingling brown sugar with soy sauce and rice vinegar. Fried rice noddles add the crunch.

When our children were little my friend gave me this recipe which hides vegetables in the sauce; my children still love it as teenagers. It freezes very well so I am never without a quick meal to hand. It can be used on its own over pasta or with the addition of single cream makes a luxurious soup. A vegetarian version can be made without the bacon.

I think this was the first recipe I learnt!! There is no baking involved so these are much quicker. You boil the potatoes first, then make the filling, then pop them under the grill. Pure comfort food!

These beefburgers are loaded with chillies. Be careful when handling the hot chillies - don't let the oils come in contact with your eyes.

Comfort food, pure and simple, using storecupboard ingredients. Serve with fried egg and grilled tomato for a hearty breakfast or brunch, or on its own with some green veg for supper.

I made this up one day out of things I had on hand, and it turned out to be one of my favourite sandwiches ever. Sauteed courgette pieces are coated with a zesty pasta sauce and topped with a generous helping of mozzarella cheese. They can also be made ahead of time, and heated just before serving.

Quick and easy - you'll never go to the sandwich shop again. This recipe has a decidedly citrus twist, but feel free to embellish however you'd like - add sultanas, peppers, pineapple, nuts, spring onion, etc.
