When our children were little my friend gave me this recipe which hides vegetables in the sauce; my children still love it as teenagers. It freezes very well so I am never without a quick meal to hand. It can be used on its own over pasta or with the addition of single cream makes a luxurious soup. A vegetarian version can be made without the bacon.

Great when the cupboards are bare or money's tight! And easy too! I use rice as the main thing, you can use anything really, pasta, spaghetti, meat, its entirely up to you, but here's how i made it with rice

Having been in catering for 40 years the biggest problems we all face is a filling tasty meal that is also healthy, this recipe can be used on its own over pasta with maybe a breaded escalope or as the base for Bolognese lasagna even spanish chicken. Due to the lack of any fat at all this does need a long slow cook. I tend to make a massive big pot of this and then freeze it into usuable size portions (rest of the now grown up family always grab a few from the freezer whenever they come round)

Always a hit with ice cream, cakes, pancakes, waffles....... You catch my drift. Great to use as a drizzle on cakes and excellent with steamed puddings!!!

A simple sauce that works just as well with TVP instead of mince. Add to spaghetti or as your meaty base in lasagne.

Chopped artichoke hearts with garlic, lemon juice and Parmesan. Great tossed with pasta or as a starter on toasted baguette. Tastes just like what I was paying too much for at a foodie shop. We freeze the leftovers in an ice tray for easy weeknight suppers.

Better than a takeaway - this fragrant, rich and versatile sauce includes spices like coriander, cumin and turmeric, along with the requisite garlic and ginger, all stirred with a purée of tomatoes, chillies and yoghurt. Mix with your favourite meat or vegetables, and serve with basmati rice and naan.

As the name suggests this recipe was invented with the leftover ingredients that were in my cupboards and fridge. It has become a firm favourite with my friends who have all used it (repeatedly apparently!). But the best thing about this recipe is that it's quick, so very easy and you can alter it all to suit your taste so don't adhere strictly to mine.
