A step by step recipe for making a baked potato. Use for jacket potatoes - try soured cream and chives, Cheddar cheese and bacon, chilli con carne or ratatouille.

This is a really basic way to roast peppers for use in any recipe. Choose any colour peppers you like, or use a variety of colours. It's even quicker if you use the grill. After they are roasted you can add olive oil and balsamic vinegar, or lightly sauté in olive oil and garlic to serve with feta cheese on crunchy toast.

My family have this every year for Burns supper. Leave out the spring onion if you don't like it.

I think this was the first recipe I learnt!! There is no baking involved so these are much quicker. You boil the potatoes first, then make the filling, then pop them under the grill. Pure comfort food!

One of my favourite dishes when I head back home; it combines hard-boiled eggs with the subtle flavour of anise and the deep brown hues of black tea and soy. The cracked patterns from the broken shells make these quite attractive! I eat these sliced in quarters and chilled as a side dish, starter or snack. Recipe courtesy of Mum.

Try this hearty and fragrant combination of black beans, spices, a splash of balsamic vinegar and vegetables. Great with plain rice or even on a jacket potato.

My family loves these as a side dish or for Sunday brunch. Delicious topped with soured cream and spring onions or apple sauce.

This is a delicious recipe for mash, perfect with sausages. If you have roasted garlic on hand, try that for a sweeter and mellower flavour.

Really tasty and really easy to make. They take a bit of time but they are worth it. They don't last 5 minutes in this house.

This is my mum's recipe. Let's just say, you'll never look at peas the same way again...they are sooo good.

A quick and tasty salad all that is required is a little bit of elbow grease for the preparation. A healthy alternative to coleslaw or a side salad with fish, meat and sauces.

A modification of the traditional potato and cabbage or kale dish, with chunks of potato and a rich cheesiness that my dad exclaims over. Using milk instead of cream makes it healthier.
