There's an easy to find (and make) kids meal out there on the web called Cowboy Casserole, which uses sausages and beans... I decided to make it for Leo yesterday and also to make a slightly different version for myself. I altered the recipe and gave it a Spanish twist - hence the name. This is a good one for a cold day.

An excellent hearty and warming family meal. Can be mildly mouthwatering or hot as you dare. It can also be varied ever so slightly by trying different flavoured corn chips/tortilla chips. Try zingy lime or fragrant chilli varieties to suit your own tastes. I have seen chilli lasagna recipes before but always using pasta sheets which doesn't feel very Mexican to me. Serve with a crisp cooling salad dressed with mint, cucumber, yoghurt or soured cream.

This can be served as a bake or, leaving the topping off, as an ordinary chilli. You can add more peppers, decrease the amount of beans and make it spicier to taste. The base can be frozen for up to 1 month.

I make this houmous all the time. It only takes a few minutes to prepare, and it's healthier than shop-bought without the oil. Increase or decrease the ingredients as desired, especially the chillies! Serve with tortilla crisps, pitta triangles or fresh vegetables. Add more of the reserved chickpea liquid for a smoother dip.

Simple recipe with exotic flavours, but only a few ingredients. Lentils are simmered in a coconut curry sauce. Serve over rice.
