The beetroot is not madness, it provides alot of moisture and tastes delicious. Leave yourself plenty of time to make this cake because it is quite a lengthy recipe. The cake is best eaten when it is still slightly warm. It is also really important to ice it at the last minute or the icing can lose its shine.

I've been Diagnosed as allergic to Dairy and Muffins on a sunday morning for breakfast was just too good to give up!! You can Replace the rasberries with other fruits - Blueberries, Strawberries, Apple, Rubarb, Dried Fruits, Banannas even Chocolate Chips.

This was my mother's recipe. She was in service in various large houses in Suffolk. I make it in the summer with fresh whipped cream with strawberries, in the winter with jam and cream, and for my husband with jam/fruit and whipped CremoVita (dairy-free cream)
