Upside-down Lemon Curd Cake
I was bored in the kitchen cooking dinner while the mrs was watching her soaps. Rather than numb my brain I decided to stay in the kitchen and cobbled up this dessert it turned out great! It was a light cake really moist and zesty from the lemon curd it seemed to rise through the cake. The cake rose nicely and when eating the lemon curd at the bottom was nice and sticky and complemented the rest of the cake.

I read a recipe a while ago for a chocolate cake made in 3 minutes in the microwave oven. I did not believe it, really, but I made some changes and tried to adapt the recipe to my taste. So here is my lemon poppy seed cake, ready in 5 minutes. It rises beautifully, more light and airy than the chocolate version.

I've read that melt in the middle chocolate cakes are difficult to get right, but this one has never failed for me! It's so easy to make - you will have most of the ingredients in the cupboard already! Serve with cream or ice cream.

Lauren's chocolate mug cake
After trying various chocolate mug cake recipes online and all of them coming out either too dry or too rubbery, I played around and found the perfect recipe. If you get this right it will be really moist and delicious! Can serve two but if you're a real chocolate fan, you might just be able to eat it all to yourself!
Breakfast eggy cake
Perfect fluffy breakfast in one, a bit like an omelette and a bit like a quiche, minus the pastry. These can be made ahead and re-heated in the microwave, or served cold with salad for lunch or dinner. They are not hugely thick, about 1cm, but this depends on the depth of your baking tray.
