An easy to make egg-free icing that works great for decorating cakes for birthdays. When you need to add colouring to icing, use colour paste. If you use liquid colouring, you may need to add more icing sugar.

I wanted an icing for a coconut layer cake that stood up to a stronger flavour without overpowering it and without being too sweet. If decorating a layer cake, I recommend spreading melted apricot jam over the centre layer, along with some of this icing.

This is a wonderfully creamy cream cheese frosting that goes well with pumpkin cake, carrot cake, chocolate cake, banana cake and more. If you want chocolate frosting, add 4 to 8 tablespoons of best quality cocoa powder, according to how rich you want it.

A homemade Christmas cake deserves homemade marzipan, and making it couldn't be easier. This is a purist's marzipan recipe, but you could also experiment by adding a touch of cinnamon, nutmeg or even orange or lemon zest.
