Here are some luxurious little ‘moneybag’ pastries filled with a ginger-spiced mixture of dried fruit, apple and walnuts. The dried fruits are first soaked in brandy, although you can replace the alcohol with fresh orange juice if you prefer. Try these at Christmas-time as a lower-fat alternative to mince pies.

Forget about smothering toasted crumpets in butter; this low-fat topping is really yummy and much healthier. Lightly mashed bananas are mixed with creamy fromage frais and warm spices and piled onto crumpets, then finished by drizzling with honey and grilled until bubbling. It's the perfect quick sweet snack.

This is one of my favourite desserts to make for company in the spring. It’s easy with store-bought sponge cake and it looks like it took hours to prepare with the candied fruit/ricotta filling and green tinted marzipan covering. Some variations use gelato instead of ricotta, but I prefer it best with ricotta.

Austria's famous melt-in-the-mouth pastry, here packed with juicy fresh cherries, looks very impressive, but is surprisingly easy to make. Ground almonds and breadcrumbs are added to the filling to absorb the fruit juices, so the layers of filo pastry bake wonderfully light and crisp.

A modern twist on the well-loved lemon meringue pie, this recipe uses lime and orange as well as lemon in the creamy filling for an exciting citrus flavour. Instead of shortcrust pastry, the case is made with crushed biscuit crumbs held together with egg white, rather than melted butter, to reduce the fat content.

This is a really simple brownie recipe. it has been tried and tested many a time and they certainly dont last very long in the cupboard. I always use chocolate chunks when i bake them however walnuts are just as good, it is just a family preference. these morish gooey chocolate treats are an all year all occasion must bake.

Serving fresh fruit threaded on skewers is an attractive alternative to making a fruit salad and is a great way of pairing complementary fruit. It will entice children to eat more fruit, too. Here an exotic nut cream flavoured with rosewater transforms the simple combination of ripe apricots and cherries.
