Make the most of aromatic, golden apricots when they're in season by using them in this attractive tart. It has a sweet orange shortcrust base and is topped with a crumbled flapjack-style mixture of oats, sultanas, hazelnuts and seeds. Serve slightly warm for dessert or with morning coffee or afternoon tea. The recipe for sweet shortcrust pastry is separate. Look in the notes section for how to make orange sweetcrust pastry.

For those who really like sweet food, you may also top the pudding off with a drizzle of coconut cream or a mild fruit such as bananas. This is a traditional recipe my friend's mother brought with her from Thailand. Some of the ingredients might be hard to find in areas without Chinese or Asian supermarkets. There are a number of online retailers that carry these ingredients.

This is delightful rice pudding, made wonderfully creamy with fromage frais and full of texture and flavour from the addition of dried cherries and pistachio nuts. It's served in individual pots with a fresh cherry compote, which will keep for several days in the fridge. The pudding is equally good served warm or cold.

This is a very delicious rice pud! It's similar to an Indian-style rice pudding. Enjoy! Top with slivered almonds and cinnamon if you'd like.

I don't usually like 'baking' with the microwave, but this recipe works great. The topping comes out crispy on top, moist inside - simply delicious! It's a dessert that's quick and easy to make, too. Best served warm with vanilla ice cream or natural yogurt.

This rice pudding turns out in a lovely custard texture. A great balm for those seeking a return to some of the old-fashioned foods of their youth! We like it best because it is oven-baked and not made on the hob.

You'll never need to buy the canned rice pudding at the stores after trying this easy eggless version made over the stove. It tastes creamy, with soft grains of rice, like a traditional baked pudding.

This is a no fuss rice pudding that tastes great - without the constant stirring or burnt milk. You can add dried fruit, and you can lower the fat by using semi or fully skimmed milk.

Rich in flavour and wonderfully creamy in texture, this satisfying rice pudding is a modern version of a popular old favourite. It's flavoured with tangy orange zest and sultanas, and paired with a cinnamon-spiced fresh apricot compote, to make a delicious dessert that is suitable both for family meals and for entertaining.
