A very tasty, hearty and rich flavoured meal, great with rice or crusty bread, a bottle of wine or a beer! Make in advance to improve the flavours.

Very tasty, spicy chilli, with a few extra ingrediants. Made using good beer to add to the overall flavour.

Silverside is a lean cut of beef, but you can also use plain or salt brisket. The dumplings puff to twice their original size, so allow plenty of room in the casserole.

Salmon goes so well with broccoli and watercress, both in flavour and colour. Here the fish is combined with potato and dill in miniature cakes that are delicious served in the fresh green vegetable soup.

A warming winter combination of haricot beans, cubes of pork and spicy garlic sausage, and lots of vegetables makes this classic country dish from south-west France a real winner. It is full of rich flavours and, in traditional fashion, is topped with a breadcrumb crust. Serve simply with a green salad to follow.

A traditional French cassoulet would take several hours to cook, but you can make this shortcut version using canned beans and succulent, quick-browned duck breasts, then leave it to bubble on the hob. Serve with crusty garlic bread and steamed Savoy cabbage.

A classic combination as a vegetable dish, cauliflower and Cheddar cheese are equally good partners in a soup. Here the cauliflower is gently simmered in milk and stock, then puréed to a velvety-smooth texture. This is a warming soup that makes a simple lunch or supper dish, served with crusty rolls.

A typical Cajun recipe, this is full of spicy, complex flavours. With lots of rice and vegetables, it is a great dish to make a small amount of meat go a long way, and offers a healthy balance of protein and carbohydrate.

This hearty soup tastes really special, yet despite its creamy texture it doesn't contain any cream. Made with cooked chicken and fresh sweetcorn and potatoes, with a garnish of grilled back bacon, it's substantial enough for a light lunch, served with crusty bread and followed by salad or fruit.

This healthy chicken and vegetable casserole makes an easy mid-week meal. To make it even quicker, you could use supermarket washed-and-cut carrots and broccoli, ready to go from packet to pan. Mixed wild and long-grain rice goes well with the casserole, and adds sustaining and nourishing carbohydrate.

This light, refreshing soup has flavours that are characteristic of Chinese cookery: sesame, ginger and star anise. The dried mushrooms and dried shrimps can be found in larger supermarkets and Oriental food stores.

Even though this soup contains bacon and root vegetables, it has a delicate flavour that makes it an appealing first course at any time of the year. Rich in B-complex vitamins, it is also low in fat and contains a good amount of fibre. Serve with crusty wholegrain rolls.
