This is a West Indian marinade that's been used for generations. It's best suited for fish and game, but I also like it on chicken and pork. Make sure you adjust the amount of chillies to your taste. Also, I sometimes replace the orange juice with marmalade for a sweeter marinade.

I invented this last night to use up a sad old sweet potato and bag of pureed squash that's been in the freezer for months! Luckily it was pretty good...

An excellent hearty and warming family meal. Can be mildly mouthwatering or hot as you dare. It can also be varied ever so slightly by trying different flavoured corn chips/tortilla chips. Try zingy lime or fragrant chilli varieties to suit your own tastes. I have seen chilli lasagna recipes before but always using pasta sheets which doesn't feel very Mexican to me. Serve with a crisp cooling salad dressed with mint, cucumber, yoghurt or soured cream.

This is a delicious version of the classic with a little more kick! You can substitute the vinegar with lime or lemon juice. Serve with farfalle, or any other pasta shape.

Fresh exotic mushrooms are available in autumn, and they add a wonderfully concentrated flavour to this express mushroom dish. Serve with creamy pasta or griddled ciabatta and a plum tomato salad. Delicious!

This pizza is fab. Trust me, there will be no leftovers. Pesto comes together with other savoury ingredients to make a killer pizza.

Passed down from my mum from a friend of my dad's, the late Mark Lasey. They went round for a dinner after the pub one night and all he had was mushrooms, onions, minced beef, baked beans and pasta that could have gone together as a dish. The dish was a success and we have now perfected it as a favourite family dish and have named it Laseyona after my dad's dear friend.

This is one of my favourite dishes. It's a typical Malay dish, and can be eaten with rice, or bread if you prefer. Try it and see what you think!

There is nothing quite like authentic indian food prepared using a traditional recipe. This dish is a must for those of you how enjoy a good old curry. You can cook this curry in the morning and leave it to infuse through out the day to make it even more delicious.

From the same botanical family known as laver in Wales, slouk in Scotland and sloke in Ireland, nori is a type of Japanese seaweed, sold dried in thin, dark-green sheets. The flavour is distinctive and savoury. Nori is usually combined with rice in Japanese cooking, but it is also good with vegetables, particularly potatoes.

Lean, white fish, rich in B vitamins, is flavoured with herbs that are quintessentially British – parsley, sage, rosemary and thyme. The creamy anchovy sauce uses low-fat fromage frais instead of cream or sour cream to add a luxurious texture to the dish.

Gingery meatballs in an aromatic sauce of cider and roasted spices make an irresistible supper dish. Try serving with Turmeric Rice (on this website) and a mixed salad.
