Salmon with a fresh Latin American marinade of orange, lime, tequila and habanero chillies, then served with a habanero-lime butter. Remove the seeds from the chillies to tame the heat.

Spicy chicken with an enticing aroma. Think of this dish as a Latin American curry - an exciting alternative to the usual!

Halved yellow and red peppers make bright containers for an ultra-easy stuffing of spicy rice and pinto beans, topped with crunchy nuts and well-flavoured cheese. All it needs is a crisp salad to accompany it. Delicious!

My favourite aunt introduced me to this deliciously rich and fragrant dish. In the past few years I've made some changes and this is the recipe my family likes best. It's a great chilli con carne alternative and it freezes well. Try it on a jacket potato!

An excellent hearty and warming family meal. Can be mildly mouthwatering or hot as you dare. It can also be varied ever so slightly by trying different flavoured corn chips/tortilla chips. Try zingy lime or fragrant chilli varieties to suit your own tastes. I have seen chilli lasagna recipes before but always using pasta sheets which doesn't feel very Mexican to me. Serve with a crisp cooling salad dressed with mint, cucumber, yoghurt or soured cream.

A Mexican-inspired quick chicken dish that is great for a midweek supper. An added bonus: it's a one-pot meal, so less washing up!

Kebabs are always a favourite, particularly for casual entertaining. Here, lean pork is marinated in a punchy Argentinian-style sauce, then threaded onto skewers and grilled with wedges of sweet potato and corn cob slices.

Perk up pork with an overnight spicy-citrus marinade. Lightly toasting the cumin seeds and peppercorns in a dry pan turns up the heat on this full-flavoured roast. Serve with black beans and rice for a true Cuban-inspired meal.

This is a popular Cuban pork dish known as Lechon Asado. I use a cheat's version. The pork is simmered in stock until tender, then shredded. It's traditionally served with black beans and rice.

Ceviche, a citrusy seafood salad, is popular throughout Latin America. It can be served with tortilla crisps as a meal or as a starter.

Tortillas enclose a filling with all the flavour of traditional guacamole, but far less fat.

I've made it a couple of times now and absolutely love it. It gets better every time! Slow cooking the roasting joint in an oven roasting bag makes the meat so tender! Serve the pork with tortillas.

This is the authentic way to make Pollo Fricassee in Puerto Rico. You can either make on the hob or in your slow cooker. It is delicious and very easy to make! Serve with white rice and a nice salad. This tastes even better when you prepare the night before; just take it out of the fridge the next morning and set it to cook.

This is an old recipe that comes from Columbia. My family loves when I cook this. Rabbit meat is very low in fat and can be dry tasting, so it marries well with coconut cream. It is best to cook the rabbit gently till it is falling off the bone. Serve with rice.

Succulent barbecued prawns. This makes the perfect summer meal when served with a crisp green salad.
