This is one of my favourite desserts to make for company in the spring. It’s easy with store-bought sponge cake and it looks like it took hours to prepare with the candied fruit/ricotta filling and green tinted marzipan covering. Some variations use gelato instead of ricotta, but I prefer it best with ricotta.

In this attractive salad, full-flavoured shiitake and chestnut mushrooms are combined with slices of tender griddled duck, juicy orange segments, crunchy water chestnuts and rice, with a fresh ginger and honey dressing. Duck meat is in fact very lean, once the thick layer of fat and skin has been removed.

The distinctive duck flavour of this terrine, heightened by the hint of orange, is perfectly complemented by the sweet leeks and fresh green beans. A small amount of duck fat is included, but there is still much less fat than would be found in a traditional recipe. This terrine will keep in the fridge for up to 4 days.

Succulent chicken thighs roasted with figs and lemon slices makes for a satisfying and impressive Mediterranean-inspired meal. The slightly sweet and sour sauce is perfect to serve with rice, and helps to caramelise the figs and lemon. Easy, delicious and if you feel the sauce isn't enough it can easily be doubled.

Delicious in cakes or biscuits, for garnishes or a snack, glacé fruit is worth the effort. It is the relatively easy process of candying fruit in simple syrup. For this recipe, we will use the example of orange peel, though you can use grapefruit or lemon peel, as well as fresh halved cherries or pineapple pieces. But you don't have to stop with fruit: slivers of candied carrot make a gorgeous garnish for carrot cakes.
