Beetroot risotto topped with halloumi cheese and boiled eggs. I was inspired to cook this after being served beetroot risotto in a very expensive restaurant and being terribly disappointed. So I made it how it should have been made! Preparation time is only 5 minutes as you do most of it whilst you're cooking the rice!

This is an Italian Christmas Eve favourite. This recipe can be doubled or tripled easily. Serve as a side, starter or over pasta. Buon Natale!

This is one of my favourite desserts to make for company in the spring. It’s easy with store-bought sponge cake and it looks like it took hours to prepare with the candied fruit/ricotta filling and green tinted marzipan covering. Some variations use gelato instead of ricotta, but I prefer it best with ricotta.

This is my version of a delectable pud I had in Milan. You could chill this before serving, but I like it warm. The rum at the end is optional, but makes for a nice presentation at a dinner party.

This is a traditional Italian starter that is, essentially, liver pate served on toasted rustic bread. This is a nice recipe for parties and wine tastings. For vegetarians in attendance, you can also prepare a version with finely chopped (and drained) herbed tomatoes as it is equally delicious. You can serve the dish hot or cold on toasted baguette or ciabatta.

I LOVE to make this impressive, but easy cake at Christmas! The cake is so sticky that you must use edible paper to line the pan. Don’t worry if the mixture seems to cool too quickly. Just warm it up in the microwave again and keep working.

This simple risotto is a perfect accompaniment to loads of mains - prawns, scallops, lamb chops. It also makes a nice first course. For something really special, add shaved truffles on top. This risotto doesn't reheat well, so prepare it just before serving.

Many cuisines have long traditions of combining fruit with cheese. This recipe stems from the Tuscan combination of juicy pears with salty ewe's milk called pecorino.
