As my husband and I are trying to eat more healthily these days, i have adapted a basic quiche recipe and replaced some of the ingredients with lower fat ingredients - it's just as tasty as the original, but better for you!

I always used to run to the kitchen when I was little and my mum was cooking this for tea. Another one of her family's simpler recipes, this makes for a very cheesey treat in winter time, just serve it up with some crusty bread and Bob's your mother's brother! I find it always tastes better with a mild rather than a mature cheddar. I have also suggested white potatoes, as I prefer their texture in this recipe. But this is also up to your own personal taste (or whatever's in your cupboards!)

I made these when I had my pub, and they were always a hit. I made them in large batches because of the standing time, but have scaled the recipe for home use.
