In true American style, this club sandwich is piled high, and packs in lots of interesting flavours and textures. Parma ham, fried until crisp, replaces the usual bacon, and mashed avocado the butter. Adding a few leaves to a sandwich is a cunning way to get children to eat their greens.

I came up with this recipe to entertain friends. Since I am vegetarian and love to barbecue, I am always inventing something new. The first time I made this, everyone including my meat-loving friends loved it!

Veggies, beans and cheese sandwiched in tortillas, then fried until golden on both sides. This is a great weeknight supper, ready in a flash - make one quesadilla per person. You can also cut them like a pizza and serve as a starter or party nibble.

These home-made burgers are healthily lean and full of flavour. They're served with griddled onions, watercress and a fabulous beetroot relish in mini focaccia – or in brown or white bread rolls or burger buns if you prefer. With chunky oven chips and a mixed leaf salad, you have a great meal.

For a smart meal in the minimum of time, stuff turkey breasts with rich, creamy blue Brie and add a flavour kick of lively ginger and sweet apple. Serve with new potatoes and stir-fried cabbage with walnuts. Delicious!

These mouth-watering Indian-style snacks are very quick to make. Chapattis are the healthiest of Indian breads, as they are often made with wholemeal flour and are usually cooked on a dry griddle or pan without any fat. A yogurt-based raita, containing cucumber and tomato, is the perfect accompaniment.

Chicken thighs are used in this recipe, but skinless breasts could be used instead. Be careful not to overcook, as the result could be rather dry chicken. Serve with warm flour tortillas, spicy salsa and soured cream.

Although in northern Mexico ‘fajitas’ refers to a specific cut of beef, elsewhere in the world the term has come to describe a combination of sizzling pan-grilled chicken strips with peppers and onions, wrapped in a flour tortilla. The dish has very little fat, but lots and lots of fresh flavours.

Tender ‘minute’ steak is quick-cooking and inexpensive, and it goes superbly well with chilli vegetables and smooth avocado in tortilla wraps, for a spicy light meal. Delicious!
