Unlike many aubergine recipes which swim in oil, this one has just enough extra virgin olive oil to enrich and enhance the vegetables in a dish that goes down well with both vegetarians and meat-eaters. This is a great cook-ahead dish, and it is delicious with crusty bread or baked potatoes and salad.

This is a traditional Chinese sweet rice recipe that is usually served for the Chinese New Year. This recipe was handed down to me from my dad who liked to eat this alone as a main dish, so it's a little heartier than most other sweet rice recipes. For those of you who know what Chinese sweet rice is, this is the most delicious recipe yet!

Not just for Christmas! This is a great recipe that I was shown how to make, it uses the "All trimmings" from a Christmas dinner to make a great roulade, either serve it into portions for a main course on its own or cut it into smaller portions to have at the side with your turkey! It is basically layered bacon, suasage meat and stuffing rolled into a log and baked for 40 mins really simple. the flavours of the bacon and sausage infuse with the stuffing, really yummy!

This vegetable-rich couscous is lower in fat than most pilafs and it makes a marvellous, healthy main dish, or an excellent side dish for almost any simply cooked meat or poultry, when it will serve 8 or more. Any leftovers can be used as a delicious stuffing for chicken or other poultry or game birds.

An easy and quick way to cook aubergine. Delicious with tomato sauce and rice for a vegetarian main. Use leftovers to make a toasted panini with mozzarella.
