This dish melts in your mouth. The credit goes to my future mother-in-law. Not only does it taste gorgeous, but halibut is a sustainably sourced fish. Each halibut fillet should be approximately an inch thick. Substitute crème fraîche for the double cream for a lighter dish.

This is a great dish for using up autumn apples. Bramley, Golden Delicious or Cox's Pippin apples work well.

You can cook the pancakes well in advance. The pancake batter can be made up to a day ahead and kept, covered, in the frige. Cooked pancakes can be made up to three days ahead, stacked between sheets of greaseproof paper and wrapped in cling film: store in the frige or freezer. If pancakes are prepared ahead, assemble the whole dish, then bake just before serving. The pancakes are made with half wholemeal flour to be light yet higher in fibre.

This stylish-looking main course is surprisingly easy to make. The chicken breasts can be prepared in advance, ready for cooking, and kept, covered, in the fridge. Tagliatelle tossed with a little grated lemon zest would be a good accompaniment, plus ciabatta with olives or sun-dried tomatoes.

This vegetable-packed quiche is cooked in a large, deeper-than-average tin and the pastry is rolled out thinly to give a generous amount of filling and small proportion of pastry in each slice. Serve warm, rather than piping hot or chilled, with a lightly dressed, crisp salad.

Duck legs become beautifully succulent when slow-cooked with wine and vegetables, and are very lean without the skin. Boiling the cooking liquid to reduce it results in a sauce with a wonderful flavour, which is great soaked up by the crisp, piquant bread croutes that accompany the dish.

Succulent chicken thighs roasted with figs and lemon slices makes for a satisfying and impressive Mediterranean-inspired meal. The slightly sweet and sour sauce is perfect to serve with rice, and helps to caramelise the figs and lemon. Easy, delicious and if you feel the sauce isn't enough it can easily be doubled.

This tastes best with fresh tuna but if you like the idea - feel free to try it with tins of good quality tuna. It's very filling but makes a lovely summery pasta dish for parties.

Chicken breast stuffed with a delicious garlic butter, wrapped in puff pastry and served on top of a mouth watering creamy garlic sauce. Not suggested as a dinner for first dates!!
