This is an adapted family recipe. It is a lot of work, but worth the effort. If you do not have a slow cooker, you can bake the ribs for 2 to 3 hours, covered, in the oven.

The easiest way to make this is with a slow cooker. The beef will fall apart easily with a fork, making it easy to shred. You can put the meat into the slow cooker either fresh or even straight from the freezer. Serve in floury baps or tortillas with shredded lettuce or coleslaw.

In true American style, this club sandwich is piled high, and packs in lots of interesting flavours and textures. Parma ham, fried until crisp, replaces the usual bacon, and mashed avocado the butter. Adding a few leaves to a sandwich is a cunning way to get children to eat their greens.

These easy beef or pork meatballs are a welcome addition to any meal. Try serving with a fresh tomato and onion salsa and pasta or oven-baked potato wedges (see footnote), if you have time.
