Halved yellow and red peppers make bright containers for an ultra-easy stuffing of spicy rice and pinto beans, topped with crunchy nuts and well-flavoured cheese. All it needs is a crisp salad to accompany it. Delicious!

My favourite aunt introduced me to this deliciously rich and fragrant dish. In the past few years I've made some changes and this is the recipe my family likes best. It's a great chilli con carne alternative and it freezes well. Try it on a jacket potato!

An excellent hearty and warming family meal. Can be mildly mouthwatering or hot as you dare. It can also be varied ever so slightly by trying different flavoured corn chips/tortilla chips. Try zingy lime or fragrant chilli varieties to suit your own tastes. I have seen chilli lasagna recipes before but always using pasta sheets which doesn't feel very Mexican to me. Serve with a crisp cooling salad dressed with mint, cucumber, yoghurt or soured cream.

I've made it a couple of times now and absolutely love it. It gets better every time! Slow cooking the roasting joint in an oven roasting bag makes the meat so tender! Serve the pork with tortillas.

This is the authentic way to make Pollo Fricassee in Puerto Rico. You can either make on the hob or in your slow cooker. It is delicious and very easy to make! Serve with white rice and a nice salad. This tastes even better when you prepare the night before; just take it out of the fridge the next morning and set it to cook.

This is an old recipe that comes from Columbia. My family loves when I cook this. Rabbit meat is very low in fat and can be dry tasting, so it marries well with coconut cream. It is best to cook the rabbit gently till it is falling off the bone. Serve with rice.
