Calves' liver may be an acquired taste, but do not reject it with too much haste; new cooking adventures rarely go to waste. This tasty dish hails from Spain.

Serve this delectable dish with a fresh, warm loaf of crusty bread for mopping up all the delicious sauce. Use Spanish chorizo if you can't find the Portuguese chouriço.

An extremely easy take on a sausage and bean stew with a rich smokey flavour. If you prefer, you could use a can of chopped tomatoes and a can of mixed beans in water instead of the baked beans but I actually find the baked beans are tastier, not to mention quicker!

This recipe can be eaten as a side dish or as a light meal. It's great with a pork chop and some crusty bread. Its origins date back to North Africa and is one of the very popular choices of tapas in Seville's bars.

My first recipe here :) I threw this together a couple of days ago, as I found some beautiful fresh Fennel and some stunning fresh chicken legs. The idea was to mix my mothers stunning recipe for Spanish garlic chicken with the fresh fennel and give that a little Italian twist.

Savoury and spicy chorizo made with pork, garlic, vinegar and dried chillies. This is a cheat's chorizo, as there's no need for casings. I just think everything tastes better when it's homemade - try it and see!

This is the paella all your family and friends will beg you to make again. It has the true flavour of Spain and has been made by my family in Catalonia, Spain for many generations. Enjoy!
