Toasted pitta bread pieces are tossed with crisp cos lettuce, spring onions, cucumber, fresh tomatoes and a flavourful Middle Eastern dressing in this salad. Sumac, a traditional spice, is available from Middle Eastern grocers. It may be left out of this salad, but I think the flavour is important to the overall taste.

Lots of chopped fresh herbs give this quick and simple Middle Eastern salad its pronounced flavour, and bite-sized pieces of crisply grilled pitta bread provide texture. Serve for a light meal with a hint of summer at any time of the year.

In a modern twist on the salad panzanella, bread is roasted then flavoured with the juices from ripe tomatoes, fresh basil and piquant capers – for the easiest summer food. Delicious!

Everything in this salad is fresh except the bread! Prepare this salad by using a loaf of artisan bread or ciabatta that is a touch stale. If your bread is too fresh, toast it until it is just nearly as dry and crunchy as a crouton.

Based on ‘fattoush’, the colourful, crunchy salad served throughout the Middle East, this version adds tuna fish for extra flavour and protein. Make sure you grill the pitta bread until really crisp to prevent it from going soggy when mixed with the other ingredients, and serve the salad as soon as possible after making.

Tuscan bread salad

Inspired by the Italian salad called panzanella, this combines crisp, garlic-flavoured bread cubes with sweet, juicy tomatoes and crunchy salad vegetables. Gruyèe and Parmesan cheeses add wonderful flavour as well as vital minerals. Try it for lunch or supper, with more bread to boost the starchy carbohydrate.

This version of a classic salad features smoked chicken rather than oily anchovies.
