A lovely apple vinaigrette makes the fresh beetroot, avocado and apples in this gorgeous salad come alive. This is a fun salad to serve guests arranged and layered on serving plates.

This is a light summery pasta salad that I love because the flavours go so well together. Lemon juice and a drizzle of good olive oil finish everything off nicely. It does taste best when chilled for 1 or 2 hours.

A healthy, bright salad. Use light mayonnaise to save on fat and calories.

For this tasty dish, tender lamb fillet is quickly cooked under the grill, then cut up and mixed into a salad of bulghur wheat, red pepper, green olives and fresh mint. No oil is used to dress the salad, just fresh lemon and orange juices, so the fat content is kept healthily low.

This salad is a riot of tastes, perfect when you are craving wholesome yet interesting food. Slices of chicken and sweet potatoes are served on a bed of leafy greens and vegetables, with a chunky pineapple salsa to spoon over.

This is based on fattoush, the popular salad enjoyed in the Lebanon and Syria, and it makes a satisfying main dish. It's important to grill the pitta bread until it is really crisp and golden or it will quickly become soggy when mixed with the other ingredients. The dressing adds the distinctive flavours of olives, anchovy and garlic.

In this colourful salad, the subtle flavour of spinach is enhanced by sweet melon and citrus, and Parma ham adds a savoury touch. You can prepare the dressing in advance, but only assemble the salad at the last moment to preserve as much vitamin C as possible. Serve with French or Italian bread as a light main dish.

Fresh crab is a real summertime treat. It is rich in flavour and combines well in a salad with crunchy apples and bean sprouts, chunks of perfectly ripe avocados and nutty-flavoured bulghur wheat.

This creamy yet light chicken salad is ideal for serving as a luncheon or cold buffet dish. Basing the dressing on low-fat Greek-style yogurt mixed with reduced-fat mayonnaise makes it lower in fat than many other creamy dressings while still keeping the richness. Don't be tempted to omit the stem ginger – its subtle flavour makes all the difference.

It is easy to overlook root vegetables as a salad ingredient. Try this colourful mixture, tossed in a creamy, reduced-fat dressing, and discover a satisfying alternative to the ubiquitous mayonnaise-dressed potato salad. It makes a tempting light lunch or a delicious accompaniment to grilled meat or fish.

When tomatoes are at their peak of sweetness, this salad is particularly delicious. It's eye-catching too if you make it with a mixture of different-coloured tomatoes. New varieties are coming on the market all the time – look for yellow cherry tomatoes as well as small red or yellow pear-shaped plum tomatoes.

This mixture of salad leaves and herbs, each with its own robust flavour, marries well with the sweetness and smooth texture of mango. The result is a salad that is colourful and refreshing, ideal as a light starter or side dish. Serve with warm mixed-grain bread or rolls.

Conjure up the colours and flavours of a tropical island with this unusual warm salad. The rich flavour of salmon is perfectly balanced by the gentle acidity of orange and the sweetness of mango and papaya. Serve with an accompanying salad of mixed long-grain and wild rice or bulghur wheat.

The ingredients for this salad are presented individually on a platter rather than being mixed together, with a simple tahini-based dressing so everyone can help themselves. Typical of Japanese cooking, there is a fairly small amount of meat per person, but plenty of raw vegetables to crunch through and fill you up.

A tasty, nutrient-packed salad that can be eaten by itself or as a side. Makes a great lunch the next day too! Add more lemon juice and olive oil if you like your salad to have a lot of dressing. Use chickpeas in place of kidney beans if you prefer.

A quick and tasty salad all that is required is a little bit of elbow grease for the preparation. A healthy alternative to coleslaw or a side salad with fish, meat and sauces.

A ready-cooked lobster makes a luxurious salad for 2 people to share. The firm, sweet flavoured lobster meat is here served on a bed of peppery salad leaves, shredded mange-tout, grapes and tiny new potatoes cooked in their skins, all tossed with a dressing spiked with lime zest. Serve with country-style bread.

Just because you need to leave it to marinade overnight - don't miss out on this simply fantastic mix of summer flavours! Try it! It goes well with some goats cheese and garlic flat bread. It's even good tossed with some leftover pasta.
