These mouth-watering Indian-style snacks are very quick to make. Chapattis are the healthiest of Indian breads, as they are often made with wholemeal flour and are usually cooked on a dry griddle or pan without any fat. A yogurt-based raita, containing cucumber and tomato, is the perfect accompaniment.

Chicken thighs are used in this recipe, but skinless breasts could be used instead. Be careful not to overcook, as the result could be rather dry chicken. Serve with warm flour tortillas, spicy salsa and soured cream.

Although in northern Mexico ‘fajitas’ refers to a specific cut of beef, elsewhere in the world the term has come to describe a combination of sizzling pan-grilled chicken strips with peppers and onions, wrapped in a flour tortilla. The dish has very little fat, but lots and lots of fresh flavours.

A vegetarian delight. My husband came up with this recipe during his bachelor days - now we both love having these on those nights you want a quick but delicious supper or midnight snack. You can spice it up with tabasco too!
