My mother used to make this and it seemed like she boiled the tongue forever. It's hard to believe now that as kids we used to fight over the tip, and the next day - tongue sandwich to school with lots of mayonnaise.

These budget friendly burgers are not only tasty, but kids love them and they're good for the waistline. Serve as you would a beefburger, or in a wrap with houmous, chilli sauce and shredded lettuce.

Chicken thighs are used in this recipe, but skinless breasts could be used instead. Be careful not to overcook, as the result could be rather dry chicken. Serve with warm flour tortillas, spicy salsa and soured cream.

This is a delicious recipe for a focaccia sandwich with roasted aubergine, red peppers and sautéed portobello mushrooms. You can substitute your favourite vegetables and use any Italian flat bread you choose. It is great to take along on a picnic!

This makes a great vegan sandwich filling. You can replace the sunflower seeds with sesame seeds if you prefer. Try it on a toasted bagel with ripe tomato slices, or on granary bread with lettuce and onion.
