Smoky roasted vegetables, rich tapenade and tangy goats' cheese make these sandwiches hearty and satisfying. A friend of mine made these and I loved them. By the following week, I was craving one of these delicious sandwiches.

A Vietnamese sandwich, made with chicken and full of pickled vegetables. My husband works around a Vietnamese restaurant, and I was making him bring me home these tasty sandwiches. Finally I attempted to make one, and found that my recipe was even better than the restaurant's, mainly because I used chicken breast and fresher ingredients. I also love the pickled vegetables, so I made sure there were plenty of those.

This is the original Lebanese recipe which is found in the Middle East in places like Lebanon and in Lebanese restaurants. It tastes delicious and is healthy because you don't use the chicken skin. If you make it, I'd like to know what you think

These mouth-watering Indian-style snacks are very quick to make. Chapattis are the healthiest of Indian breads, as they are often made with wholemeal flour and are usually cooked on a dry griddle or pan without any fat. A yogurt-based raita, containing cucumber and tomato, is the perfect accompaniment.

Sometimes I add fresh or dried chillies to the marinade to spice it up a little. I serve it warm, with shredded lettuce in a tortilla wrap.

To make a soup into a complete meal, sometimes you need a little more than just a hunk of bread. These wraps can be eaten on their own, but are best served with Roasted Cherry Tomato Soup (recipe on this website) for added protein.

This open sandwich of toasted ciabatta bread with a mixed pepper topping is typical of the style of food enjoyed in Mediterranean countries, where bread, along with plenty of fruit and vegetables, is a mainstay of the diet. A little chorizo sausage adds a spicy note to the sweet pepper mix.

This is a treat at lunchtime, or even for a light supper with chips or a green salad. Tinned artichoke hearts are really versatile - use any leftovers in a pasta dish or to top a pizza.

Only three ingredients, but these burgers are heavenly. A tasty and healthy alternative to beefburgers.

Lamb and feta give these burgers a unique Mediterannean flavour. For an even stronger Greek touch, serve the burgers in large pitta breads with red onion rings, chunky cucumber slices and Greek-style yoghurt or bought tzatziki.

Made with rice and rolled oats instead of mashed beans, these vegetarian burgers have an unexpectedly light texture. Serve them hot in burger buns, with a mixed salad.

Fresh salmon fillets are marinated, then lightly grilled and served in warm ciabatta rolls with mixed salad leaves and a basil mayonnaise, to create a very tempting and special lunch dish. Lightening the mayonnaise with yogurt reduces the fat without losing out on any of the creaminess.

Five-spice powder – a fragrant mix of cinnamon, cloves, fennel seeds, star anise and Sichuan peppercorns – is used a great deal in Chinese cooking, and here it adds an oriental flavour to appetising, pitta pocket sandwiches.
