My aunt used to make these for me for lunch when I spent the summers with her.

These wraps are tasty but simple and quick to prepare, ideal for packed lunches or a quick meal at home.

This is the original Lebanese recipe which is found in the Middle East in places like Lebanon and in Lebanese restaurants. It tastes delicious and is healthy because you don't use the chicken skin. If you make it, I'd like to know what you think

Veggies, beans and cheese sandwiched in tortillas, then fried until golden on both sides. This is a great weeknight supper, ready in a flash - make one quesadilla per person. You can also cut them like a pizza and serve as a starter or party nibble.

This recipe is just thrown together but it is really nice. I was a bit sceptical at first because I'm not a mustard lover and even though you can taste it, it's not overpowering it does just blend in with everything else. My kids love em.

These home-made burgers are healthily lean and full of flavour. They're served with griddled onions, watercress and a fabulous beetroot relish in mini focaccia – or in brown or white bread rolls or burger buns if you prefer. With chunky oven chips and a mixed leaf salad, you have a great meal.

Made with minced turkey, these burgers are generous in flavour and lean on fat, for a satisfying dinner that's quick to make and a great favourite with children. Serve in muffins, baps or ciabatta rolls.

A wrap version of the sandwich that my kids seem to like better. I like them too! Sliced avocado is a nice addition.

These budget friendly burgers are not only tasty, but kids love them and they're good for the waistline. Serve as you would a beefburger, or in a wrap with houmous, chilli sauce and shredded lettuce.

This is a simple recipe. After making them the first time my husband said 'no more' to beef burgers. These are really good - any cooking method may be used, and they freeze very well.

These spicy chickpea cakes are a popular street food all over the Middle East. Served in pitta pockets with a colourful crunchy salad, they are deliciously healthy as well as fun to eat.

This is one of my favourite sandwiches to make and eat. I have it on my 'lite bite' menu in work; it's one of my best sellers. It's totally different from the usual steak sandwich you find on most menus which can be nice, but usually isn't.

This is my delectable version of a croque madame, with goat cheese and Pecorino Romano.

This is the perfect midweek supper fix. Instead of using a toastie maker, the toasties are dipped in egg and pan fried. Comforting, quick and delicious!

Cheese on toast, only better! Ham and pineapple add a tropical touch.

Adding diced apple – tart or sweet fruit, to your taste – to chicken burgers not only gives a fruity flavour that complements the meat and herbs, but also lightens up the meaty burgers and provides fibre. Served in baps, with honey mustard and crisp fresh watercress, these are a great alternative to beef burgers.

Pan-fried lamb meatballs make a delicious filling for warm pitta bread pouches, packed out with a crisp cucumber and leafy salad. Serve with cherry tomatoes.

Serve these classy burgers with a rich layer of blue cheese sandwiched between two rounds of mince at your next big party for an easy, delicious main dish.
