When our children were little my friend gave me this recipe which hides vegetables in the sauce; my children still love it as teenagers. It freezes very well so I am never without a quick meal to hand. It can be used on its own over pasta or with the addition of single cream makes a luxurious soup. A vegetarian version can be made without the bacon.

The trick to great guacamole is - of course - good avocados. Make sure your avocados are ripe, and the Haas variety is always best. Serve this dip with tortilla crisps or an array of fresh vegetables.

The secret ingredient in this pasta sauce is bicarbonate of soda - but do not taste the sauce right after adding it. Wait a while, and this sauce will not disappoint. Stir in Parmesan and keep simmering. Let the flavours meld overnight, then serve over your favourite pasta.

Fresh cranberries are cooked with orange zest, orange juice, lemon juice and brandy. This is a lovely holiday sauce to serve with roasts, and to put on the sandwiches you make with the leftovers!

This spicy vegetarian sauce is best served with pasta (penne is ideal) and some grated Parmesan or Italian-style hard cheese or Gruyère. Keep cans of chopped tomatoes and chickpeas on hand to make it often!

Wash, peel and de-seed the tomatoes - I found using a regular peeler did not work too well, I used a perforated edged knife to peel and de-seed.

Sometimes I throw in some fresh herbs from the garden too. It's perfect for dipping with crisps or veggies, and is much lower in fat than your typical shop-bought dip.

This is a nicely spiced enchilada sauce - pour over corn tortillas stuffed with cheese and your choice of shredded beef or chicken, or refried beans.

Having been in catering for 40 years the biggest problems we all face is a filling tasty meal that is also healthy, this recipe can be used on its own over pasta with maybe a breaded escalope or as the base for Bolognese lasagna even spanish chicken. Due to the lack of any fat at all this does need a long slow cook. I tend to make a massive big pot of this and then freeze it into usuable size portions (rest of the now grown up family always grab a few from the freezer whenever they come round)

This sauce adds a very nice flavour to mashed potatoes and the combination goes very well with steak. To reduce the amount of fat in the sauce, I like to use evaporated milk. You can use cream instead, but I think the lower fat version is just as tasty!
