Invented by a friend and I while very drunk after a midweek afternoon pool tournament. I somehow had the where-with-all to write it down. I reckon it'd work well with swordfish but I've never tried it.

This is the first recipe I've made by myself, usually I use a recipe but didn't have access to the internet. I cooked this with chunks of chicken but plan on cooking it to have with scallops so this recipe is just for the salsa. It would also go great with some pasta though. If anyone has any advice or tips for me then they would be greatly appreciated as I am a beginner cook. Thanks and enjoy :)

Easy Toasted Almond Pesto

This is the easiest pesto recipe, using almonds instead of pine nuts. It can be prepared in 2 minutes after you toast the almonds.

Garlic and herb dressing

Pasta is superb with a simple dressing of garlic, herbs and good olive oil. The secret is to warm the garlic with bay leaves in the oil, to mellow the garlic flavour slightly. Then the dressing should be left to stand for 30 minutes, or longer if possible, so that the flavour of the garlic can infuse the oil.

After many attempts to create the best meatballs, I think I've got them as good as I can get them. Great on a budget and just as a warning, you will not be able to stop eating them. I serve with wholewheat or egg spaghetti, as the normal and quick cook ones don't taste of much to me and, of course, garlic bread.

Simple Caramel Sauce

One day I was wondering how that sticky caramel stuff you can find in chocolate bars like Mars and Twix is made. With sugar, of course, and, why let's add some cream... Though this recipe is quite simple, it takes only equal amounts of sugar and cream, it can be quite difficult to make this caramel sauce. It may take some practice to make te caramel. I've made this sauce twice now, and it's been a great success.
