This has always been a favourite in our family since I was little. My mum gave me the recipe last year, when I cooked it for the first time. Now it's not just for Christmas anymore! It's fab warm, but also good cold. This can be made in advance and chilled in the fridge

This is a great recipe for falafel. Everyone that I have made it for loves it. Delicious served with cucumber sauce in a pitta with tomatoes.

I make this for my kids for a treat - either for a hearty snack or supper. They adore them and I love them because they're easy to make!

For a complete healthy and tasty meal, serve with Ebly wheat or rice with diced carrots and courgettes. Also makes a great sandwich filling with cheddar cheese in fresh baguette...ideal for kids and greedy adults!! Use organic products for a nicer and tastier result.

Home-made mini pizzas topped with a rich tomato, chilli, olive, caper and artichoke mixture will spoil you for anything less. Some crumbled Gorgonzola cheese melted over the top makes a change from the usual mozzarella, and gives these pizzinis a fabulous flavour. Serve with a mixed leaf salad for a delightful lunch or snack.

This is like a savoury tray bake, with marrow, herbs and Parmesan cheese. A delicious and unique way to use marrow when in season. Use regular courgette instead, if preferred. Serve as a side dish, snack or main.

Many versions of this creamy aubergine dip are to be found around the Mediterranean. This one is thickened with ground almonds, which add both texture and protein. Served with pitta bread and crunchy vegetable crudités, the dip makes a delicious snack or starter for 8, or a well-balanced lunch dish for 4.
