The ultimate version of a peanut butter sandwich takes some good hearty bread packed with sesame and sunflower seeds, with sweet mashed banana as a perfect partner for the peanuts. Serve with crisp apple or fresh, juicy pineapple wedges for extra fruit value.

This easy houmous recipe is a delicious twist on the traditional. Serve with crudites as a party nibble, or use to fill veggie sandwiches.

There are many versions of Welsh rarebit (or rabbit). The one here is richly flavoured with mature Cheddar cheese and thickened with breadcrumbs to add texture, and is spooned over thinly sliced red onions before being grilled until golden and bubbling. A spinach, apple and celery salad is the perfect partner.

I'm from the States, and have taken to Beans on Toast and Cheese on Toast. And with leftover Chilli Con Carne, one day I put those two together with Chilli on Toast. This recipe is for a single serving but can be easily doubled, tripled, etc.

This has always been a favourite in our family since I was little. My mum gave me the recipe last year, when I cooked it for the first time. Now it's not just for Christmas anymore! It's fab warm, but also good cold. This can be made in advance and chilled in the fridge

Excellent for salads or on there own, as egg mayonaise. A creamy yellow yolk centre cooked to perfection with different grading of texture as you bite through the egg.

This is the perfect midweek supper fix. Instead of using a toastie maker, the toasties are dipped in egg and pan fried. Comforting, quick and delicious!

Here, the soft interiors of large crusty bread rolls are hollowed out to provide a crisp casing for a gently spiced mix of tuna, sweetcorn and red kidney beans, and then warmed in the oven. For a light lunch that is satisfying and well-balanced, serve with a mixed tomato and leaf salad.

Adults love this one, too! It's perfect for the 4th or 5th day of Passover when you start running out of creative cooking steam! You can add any vegetables you like or have on hand.

Sweet leeks, aromatic basil and savoury Parma ham combine with mozzarella cheese to make a sophisticated pizza-style topping for wholemeal muffins. For a crisp and refreshing contrast, serve with a simple salad of watercress sprigs and coarsely grated carrot tossed with extra virgin olive oil and lemon juice.

Make this whenever you are short of time and want to prepare a satisfying snack quickly. The rich flavour of chestnut mushrooms is enhanced by cooking them with garlic, herbs and a dollop of tangy crème fraîche, and they taste wonderful piled on top of toast spread with low-fat soft cheese.
