A dip low in fat and calories, but with loads of flavour. Let the dip chill so the consistency thickens and the beans have time to meld with the spices. If you can't find tinned black beans, use dried or a tin of refried beans instead.

This is absolutely the best houmous I have ever had. It is great with toasted pitta bread. Add more lemon juice if the houmous tastes like it needs a lift.

This is a wonderful Mexican-inspired salsa! It is full of black beans, corn, tomatoes and onion. I can never make enough when I have a party. Chill 24 hours before serving if you have time and serve with tortilla crisps.

Speed up the process by using a tin of black eyed beans, if you prefer. This tastes best served at room temperature. It makes a wonderful dip for tortilla crisps, or served on top of toasted ciabatta bread.

I make this houmous all the time. It only takes a few minutes to prepare, and it's healthier than shop-bought without the oil. Increase or decrease the ingredients as desired, especially the chillies! Serve with tortilla crisps, pitta triangles or fresh vegetables. Add more of the reserved chickpea liquid for a smoother dip.

Here, the soft interiors of large crusty bread rolls are hollowed out to provide a crisp casing for a gently spiced mix of tuna, sweetcorn and red kidney beans, and then warmed in the oven. For a light lunch that is satisfying and well-balanced, serve with a mixed tomato and leaf salad.
